Your body has a bunch of immune responses so you don’t instantly die the second you get a bacteria or piece of dirt in your body. An allergy is generally when your immune system either misidentifies something as a threat when it’s not, or else misidentifies how much of a threat.
Like if you had the plague you might want your immune system to turn up every dial to 11 and try everything it can to kill the germs. You probably won’t want that if it’s a piece of pollen or something. But your body is just kinda guessing what is or isn’t a big deal. It does a good job in general, but sometimes it gets it wrong.
