By amateur singers I mean those that can’t read notes and don’t have much experience in singing yet. Do they just replicate other singers by ear? What about new songs that haven’t been sung before?

They listen to a recording or to someone (possibly themselves) playing it on an instrument. I’m an alright singer, but I can’t sight sing. (I can a bit, but not perfectly.) But I can play a line on the piano and sing it back.
It’s worth pointing out that being able to sing and being able to read music doesn’t mean you can automatically sing a melody by reading the music from a sheet.
