Taste, color, and what flowers are in the area. Commercial beekeepers also transport to specific areas for almond (not edible), clover, blueberries, buckwheat (tastes like molasses).
Different plants will flower and start their nectar flow at different times. Bees will collect the nectar as soon as it’s available and start to turn it into honey. An experience beekeeper can know what nectar flows are active in their area at what times, and therefore know what the sequence of honey will be. By harvesting honey mid-season, they can “choose” what flowers/plants are the basis for the honey.
