Food goes bad because bacteria (that occurs naturally everywhere) starts eating it and multiplying, to a point that eating it would make us sick. Food preservation slows down the process of the bacteria eating and multiplying. Freezing food slows down bacteria, salt dries up bacteria, and chemicals can do the same thing by making it harder for the bacteria to eat the food and or multiply.
