If they have a den underground that keeps them cool, wouldn’t that make it really hard to climb out and sun themselves?

It is typically harder because they are more lethargic but being out in sunlight and heat all day is also not good for them either much like anything else it can be detrimental. Which is why snakes and the like seek shelter, going in and out throughout the day to regulate their body temp. Lowering their body temp allows them to sleep, while raising it allows them to hunt and aid with digesting food.
