A larger surface area spreads the force more evenly across the egg. Tap an egg on the edge of a cup, and it cracks because all the force is concentrated on a small point (Similar to how bullets work!).
A fun “experiment” i remember is to try as hard as you can to crack an egg by squeezing it with one hand. It can’t be done unless you’re some olympian god. Do the exact same thing but this time wear a ring. The raised surface of the ring comes in contact with the egg first and helps apply pressure in a smaller area.
