how do eggs not break when you squeeze them from each side with your palm and not interlocking your fingers?

because the shell spreads the force around the egg. Breaking things is usually easy because u use some sort of physic force enthancer like a lever or u focus alot of force on a small point. the palm egg reverses this and let u put ur force all around an egg without using any kind of lever or focusing.
lets say normaly when u crack an egg u use 2 newton to smash it on an edge. the surface area is a few mm^2 where the force impacts the shell. when u press the egg with ur palm u have a surface area of 50cm^2 or 5000mm^2
