You get to recognise players by their body shae and size, the way they skate, hold the stick, position on the ice, game situation, who is on the bench etc. They aren’t as anonymous as the question implies.

Fans will know many of the players numbers and positioning on the ice can help. Fans that watch a certain team regularly will be able to identify each player based on their stride. Everyone skates differently

Not sure if it’s still there, but the Hockey Hall of Fame had a little booth where you could try out commentating a play by play. It was hard as hell and you feel like your mouth is going full 3 Stooges of words trying to get out.

It is much easier at a live game, if you have a chance to go watch. Seeing the full rink really helps because you can see all the line changes, and importantly, what everyone is doing all the time. One or two games, even at a Junior A or AHL type level and it will make a huge difference.

Also, as a Canadian, I feel I must point out, it’s just “hockey“. The ice is implied. 🙂
