I think it depends on the phone. On the Iphone 12 Pro and Pro Max, it fires light rays at objects and measures how long it takes them to come back. That way the phone can keep track of where everything is, regardless of how much it’s moving. For other phones (during instances of excessive motion), i think it stores the data of the distances, and waits until the phone is stabilized to continue the measuring process.

I think It maps the surrounding, creates a digital reconstruction and then outputs the distance you asked for from that model. It uses the stereo-image from the cameras and the information about movement from the accelerometer to determine what it sees and where it is.
