One theory is that sweet tasting things cause your body to start producing more insulin in anticipation of a rise in blood sugar, which is kind of a cool adaptation.

Most people know that insulin allows sugar uptake into cells, but it’s also the hormone used for body fat production.

Seeing how nobody mentioned it:

It’s also not entirely true that “0-calorie” sweeteners have actually no calories. It just has to be low enough to be legally classified as a 0-calorie thing… But that in itself isn’t explaining stuff.

Eating volume. The body creates fat from many nutrients, because it’s energy that is easy to store. Eat a burger that’s around 500 calories, and your diet coke ain’t going to help that number at all.

Many fat people are forced on artificial “0-calorie” sweeteners because they get diabetes from their fat harming the healthy production of insulin. The reduced amount of blood sugar only helps with mitigating that.
