How do they learn what color and texture to turn into if they have no mirrors to see and adapt to?

If I remember correctly octopus have many “eyes” all over their bodies allowing them to see what’s around them. They’re not like normal eyes so it’s not like they have 360 vision but these eyes are what they use to determine what colors to change into to camouflage themselves.
