How do scam baiters like Pierogi mess with the scammer’s files without them realising it, though they’re using simple TeamViewer, AnyDesk, etc?

There are different ways to do it. One way is to exploit the way the scammers scam their victims if you know how they run their script. For example, sometimes the scammers ask you to install the client of the remote control software, then they ask you to give them control. During the time you are in control you can do anything. Scam baiters tend to play dumb throughout the call which gives them extra time to mess with the scammers without them clocking on.
