In cases where they really are connected, you brace the wall that is supposed to remain. Then you demolish the part you want gone, carefully. Not a job for a wrecking ball, that’s where you go at it with jackhammers and hydraulic claws.

They did it to a building in my area lately. Part of it was classified as a historical monument, but that had a modern annex. They took down the annex like I described above. Took a couple of months.

Most buildings are not actually connected. There are two walls some 10 to 15 cm apart. From the outside insulation closes that gap and it seems as they are connected.
