Surface is glossy when light reflects of it orderly. So every photon moves perpendicular to every other. That would be 100% glossy surface. The more chaotic it is we see it more matt. You usually adjust it with adjust it with pigments. If you put bigger rough pigments it would look more matt.

If you want a satin finish, you can add a material called silica. If you want a matte finish, you can add a material called kaolin.
