Scientists use a process called chromatography, which helps separate different compounds in the food.

They mix food into a liquid, then pass it through a long thin tube filled with a solid material. Different substances in the food will pass through the material at different rates, causing natural separation. The material they use to trap the substances depends on whether the vitamins are water- or fat-soluble.
