How do we know with any accuracy what and how well animals and insects can see?

Most animals can be trained in basic tasks. We can then put them in repeatedly harder and harder situations and see when they can no longer complete the task reliably. For example if you train an animal that a screen with vertical lines have food next to it but a screen with horizontal lines does not then you can increase the density of the lines until the animal fails half the time. You can also change the colors of the stripes and whatever else you might think of. There are still a few animals that can not even be trained to do simple tasks like this. And for those you need to use things that comes instinctual to them, something they would react to when they saw it.
