More or less the same way wireless anything works. They connect via a wireless network protocol, almost universally either Wi-Fi or Bluetooth and then they open a socket specifically for transferring video like for example mpeg4. The sending device encodes the video into that format, the display receives it and has a dedicated hardware decoder to display it with an acceptable but measurable delay.
