Most of the calories in soft drinks come from sugar. In zero calorie drinks, they replace sugar with other sweeteners that don’t have any calories.

Zero calorie foods are somewhat rare. They used to say that some really fibrous veggies like celery take more energy to digest than they provide. In general, non “sweet” veggies have very low calories on their own. Leafy greens, for example, have tons of vitamins, but almost no calories. Animals that live off of things like grass typically have special digestive systems with things like multiple stomachs to allow them to get energy out of what they eat. Humans don’t have that.
