Do you think there’s no friction between jets of water and your dishes? Because there certainly is friction.

Soap is also very good at dissolving food left on the plate, due to soap being both polar an nonpolar at the same time. It has a polar side, like water, so it easily dissolves in water, and a nonpolar side, like oil, so it can easily dissolve in oil. This helps the water dissolve the leftover food
