How does the e-ink work? How does it refresh so quickly? How is it touch sensitive?

Touch sensivity and the display are different tech. The eink part is a sandwiched layer filled with half shaded balls. The balls are charged so when a charge is applied to the sandwich via a grid of tiny wires the ball rotates.

As they are only shaded balls that’s why you need a light source to be able to view eink.

The update speed is actually pretty slow but fast enough for the application. Also once the charge has been applied it doesn’t need to be maintained that why the screen can stay the same if the power is removed.
