Gravity. No matter where the seed is or how deep it’s buried the seed will grow roots down towards gravity and shoots away from it

Plants have gravity sensing cells.
Which are cells with little grains floating around called statoliths
They sink down to the bottom, and from there the plant treats that part as down and the opposite as up.
They launched some plants into space and watched them grow for science,and the result was a tangled mess.
Nowadays they just put the plants in a centrifuge if they want to grow them in space.
