It uses either your GPS location or uses an acceleration sensor depending on what kind of speed you’re talking about.

They have GPS and as a result they can log it’s position on Earth to within a few meters over and over all while running a clock on the whole process.

Distance divided by time equals speed (velocity).

To further refine and perfect the readings, phones can use their advanced sensors (gyros and accelerometers) to detect much smaller changes in the device’s relative speed that it can integrate to give a more precise instantaneous reading.

They use a GPS. It’s basically like a big scanner in the sky that can see how quickly you got from one destination to the other and can do the math to figure out the speed.
