the body of the lamp has the ability to measure its capacitance ( the ability of an object to store a charge) when you touch it your body adds capacitance and the circuit tells the lamp to turn on.

its kind out like how you can pick up a static charge from a carpet, your ability to hold that charge is your bodies ( and everything your wearing) capacitance or its ability to act like a battery ( or more accurately a capacitor ) for that charge until touching something grounded allows you to discharge. thats what the body of the lamp measures

the fact you carry a charge is why your supposed to ground yourself before you work on sensitive electronics as well.
