How does a water Boiler utilize the hot water from Solar Panels, if it isn’t turned on and has unheated water in it?

Forgive me, English is 2nd language so i hope I’m getting all the terms correctly.

I have this Solar+Electric Boiler system at home, if there’s a hot sun outside, i get hot water, and if not, i need to turn on the boiler (electrical) and that heats the water. The tank itself is in the house, and the panels are on the roof.

Since the tank is filled with 150 Liters of water, and i haven’t turned it on in a week, im assuming the water inside it are room temperature, however, since it’s been a hot day, the solar panels worked and when i turn on the shower, i have very hot water.

That caused me to think, don’t the hot water coming from the solar panels mix with the room temp water in the tank? how does it work?

There is usually a heat exhanger in the tank and the water in the boiler and the solar panels is not potable and recirculates through the exhanger to heat the potable water around it.
