How does a well work? Is there a finite amount of water in a drinking well? Why is it okay to drink? Do they somehow replenish water or if they dry up that is it?

A well just gives you access to what’s essentially an underground river. It’s water that flows, but flows more slowly & through loosely packed material, being held up from below by some more dense geology that prevents it from penetrating deeper into the ground (such as bedrock).

It may or may not be okay to drink. It’s replenished the same way a river is, from weather and higher sources feeding into it. It could dry up, for the same reasons a river could.
