What’s the process for Fabreeze sprays to eliminate odors? Is it just a nice smell covering up a bad one or some sort of witch craft?

Cylodextrins in Fabreeze trap odor molecules. Fabreeze doesn’t mask odor with fragrance, it traps the odor molecules so you don’t smell the odor.
