How does a game of chess work between two top level players? Do they have to think like 25 moves ahead to find any sort of opening against the opponent?

Chess is about thinking ahead of every possible movement your opponent can make and deciding on the best counter.

People don’t really “think several moves ahead” as that idea is widely understood. There are just so many possibilities that nobody can consider them all. You can, however, look at the board to see what options you have. In general, you want it so that your pieces have a lot of options for moves that they can safely make, but the other guy doesn’t. You can look at the board to see what options you have and think of the ways that the other guy can respond.
