How does Hydraulic Press stop so fast after shaterring something? Why isn’t there any momentum?

Momentum is a function of speed and mass. It is literally velocity times mass. There is no momentum because there is no (or hardly any) velocity. The head of the press is never moving quickly. It isn’t a hammer, where the impact force depends on the speed of the hammer.
