How does my Chromecast continue playing on my television ever though I’ve left the house with my cellphone?

Because your phone merely acts as remote (unless you are mirroring the screen)
You simple tell the Chromecast What videos to play and it will play them with its own connection, yes you can pause and play, but that’s just sending simple commands, the video doesn’t pass through your phone
Your phone is just a remote control to tell your chromecast what to do. Thats it. Just like if you took your TV remote with you on a vacation but left your TV on, the TV would keep playing.
Your phone is just the remote to tell the Chromecast what to play. Nothing is actually playing from your phone.
When you select a YouTube video it is Chromecast that is actually talking to YouTube to get the data.
