How does packed potato chips retain its taste and crunchiness for so long but lose both when kept in open for a short while?

So you know how everyone complains that the packets contain almost nothing but air and that’s misleading?

That bag of almost nothing but empty air does two things.

One is that it provides cushioning so you don’t get a bag of potato crumb.

Two is that it’s a bag of nitrogen. This is because the nitrogen doesn’t react with the chips. Normal air contains oxygen and the oxygen reacts with the chips and makes lose quality but changing the chemicals in the chips.

Crispiness is maintained by not exposing the chip to water. Once a bag is opened, the chips absorb water from the humidity in the air.

On a related note, the flavor is maintained by typically filling the bag with nitrogen.

There’s little to no moisture in the bag they come in. But there’s plenty in the air we breathe. So when you open the bag, the moist air gets to the chips and take away their crunchiness.

Not that sure about the taste though.

The nitrogen in chip packets- the ‘air’ that we shit on Lays for, preserves the chips because it doesn’t react with the chips. So thats why it does not lose crunchiness inside. Once its exposed to outer air, it reacts with the oxygen and loses its crunchiness.

Exposure to oxygen will do this to the chips. They are packaged with a nitrogen blanket in an oversized bag to keep them fresh.
