How does packed potato chips retain its taste and crunchiness for so long but lose both when kept in open for a short while?

There’s little to no moisture in the bag they come in. But there’s plenty in the air we breathe. So when you open the bag, the moist air gets to the chips and take away their crunchiness.

Not that sure about the taste though.
