Not all particles. Particles of stuff that can burn. The common ones would be flour or sawdust.

An explosion is a rapidly expanding (usually hot) gas. The cause is a very concentrated high pressure area and the gas tries to move to a low pressure area. This is most usually the result of something burning VERY quickly.

Things that burn do not usually explode because there is a limited amount of oxygen and this slows down combustion. But sawdust or flour particles scattered in the air in a confined space now has a lot of oxygen available to each particle and this allows it to burn very quickly, heating up the air rapidly and causing a high pressure within the confined space – which is the explosion.
