Oil and water don’t like to mix, so running your hair & scalp under plain water does a poor job of removing any grease or products. Shampoo has little two-ended chemicals called “surfactants”, one end of the chemical likes to clamp on to water and the other side likes to clamp on to oil. So the grease and products in your hair get attached to the shampoo and then the shampoo attaches to the water and washes away when you rinse.
