I keep seeing in home improvement shows that there’s a very “zem garden” texture put on the adhesives used to lay laminate hardwood. I was wondering what the benefit of texturing your adhesive is.

If you just put it on in a smooth layer you’ll trap air bubbles all over the place and get a somewhat random bond.

The “zen garden” look gives a uniform surface for the laminate to stick to and a nice pathway for air to squeeze out so you get a consistent bond across the surface.
