There are a couple of things that could make water go upwards in pipes. The easiest one to understand is pressure. If water is pressurized (for example, by a pump,) it can flow uphill.
The drinking water that comes in to your house is pressurized enough that it can easily flow upwards to the upper floors of your house, and still have enough pressure for you to have a good shower and run your appliances and stuff. Depending on where you live it is either pressurized by large pumps, by water towers, or by the reservoir being higher than the houses in the town.
