Why does it pretty much go back to normal a day or two after overloading it with food?

Whenever you flood your body with a substance that has a negative effect on your body (in case of binge eating that’s often sugar and/or salts) your body responds by overproducing certain substances that create an opposing effect in the body to bring it into balance. This creates time for your body’s natural processes to break down everything through your digestive system, liver and kidneys after which it’s all back to normal.
