What differentiates a level 1 team (e.g. Premier League, Bundesliga) from, say, a level 3 team (e.g. English Football League One, 3. Liga) in tactics and physical ability (and also management and training)?

It typically differs in speed, accuracy, and positioning. For me, I always offer to people to find a day when they can watch three to five leagues back-to-back all in the same day.
Find a local youth game (under 12) or a junior game (under 20), a lower-league game, and a top league game. If you can, watch all from the same country so you don’t have huge variations in playing style.
The differences will become apparent pretty quickly.
