What makes you think they dont have drinkable water and have been able to survive for so long ?

Even atolls have rain. Which collects in streams and lakes as well as creates a groundwater basin. So there is fresh water. The trope of people being stranded on a remote island traveling inn to the forest finding a waterfall and a tiny lagoon with fresh water and even fish is very real.

Rain, and also these islands sometimes have a water table you can dig too and the sand filters the water to be fresher
