How is a Google Pixel phone able to recognize thousands of different songs it hears but only use a small amount of data stored locally to do so?

It’s called fingerprinting. As you yourself can probably recognise a song by just hearing a couple of seconds, there are algorithms that basically can do the same. They compare what they hear with a vast catalogue of songs.
