It’s basically a box that was on the shelf, un refrigerated, that contains cooked chicken. How are they able to keep cooked chicken shelf stable for so long?

Just to add that, consider that canned chicken also doesn’t need to be refrigerated. As long as the container can be sealed while sterile it doesn’t matter if it’s a can or a plastic bag, nothing can get in to spoil it.
