Whatever pieces of them that can be collected can be scanned for dna and then identified if they have a dna profile for that person in a database. Often they can find fingers and print them but if they can they find teeth and match them.

An autopsy is usually performed to identify the cause of death. When the cause of death is obvious, such as an airplane crash, they will extract DNA from the remains for identification purposes.

If foul play is expected and there isn’t much left of the body they can test for certain chemical residues that are not consistent with the obvious cause of death.

Sometimes it’s simply not possible to find useful information from the remains.
