how is evidence collected from people who died in an explosion or something similar that resulted in the bodies being severely… limited? Can you even conduct an autopsy in such situations?

An autopsy is usually performed to identify the cause of death. When the cause of death is obvious, such as an airplane crash, they will extract DNA from the remains for identification purposes.
If foul play is expected and there isn’t much left of the body they can test for certain chemical residues that are not consistent with the obvious cause of death.
Sometimes it’s simply not possible to find useful information from the remains.
