How is it that an apple with less than 100 calories satiates hunger better than most snacks and junk food with way more calories?

Because near term hunger isn’t measured by calories, it’s by fullness. The apple is filling (lots of water, lots of fiber) and has enough sugar (fructose) to take the edge off the initial low blood sugar that got you hungry in the first place.
