How is saliva so readily produced? Do we just have reservoirs of water in storage somewhere in our head?

The saliva is actually collected in little tubes (ducts) before going into your mouth, so there is always a bunch of saliva ready and waiting to squirt out when needed.
Now I am thinking about my salivary glands and it is grossing me out. 🤮
