How stomach acids does not simply destroy the nutrients of what we eat?

I can imagine that they work also to dissolve bigger pieces of food, but I do not understand how they do not simply “destroy” what we eat.

The weak (!) acidic cocktail in which your food marinates mainly serves to disinfect it. Actual *digestion* is done by a myriad of enzymes that break everything down into a limited set of substances that can be absorbed and used by your body.
