How would they add subtitles and translations to videos from the 40s and the 90s ?

Soft coded subtitles are written on a separate document with time stamps and video player shows that text at correct time due to time stamps, i don’t remember exactly what file type it was. People can write those themselves whenever they want.

Hard coded subtitles take the same file burn those subs into the video through video converter programs.

The same way translation and subtitles are added to modern videos?

Both are post-production/post-edition processes. They are done once the final Original Version video is already produced.
