how your phone can tell the difference between the charger that came with it and a third-party charger and also how that can affect charging times

I dont think your phone “knows” per say. But what does change the charging time is the quality of the chord, length of the chord, quality of the wall adaptor, and output of the wall adapter. That’s what I have gathered.
