If I do (for example) 10 squats 5 times over the space of the day, is that just as good as going 50 squats once a day? Why or why not?

I think if you are trying to burn fat then any kind of movement will help you burn calories/energy. Ultimately your body needs “x” number of calories/energy to maintain itself. If you eat less than “x” and supplement that with exercise, overtime you will lose weight.

Once you are getting to a plateau then you will need to use strategies to build muscle and maintain it. In that case spreading out squats probably wouldn’t help build the muscle as well as other strategies people use.
