iPhone videos often contain pop-ups with messages in them. This seems like a unwanted feature. I don’t own Apple products, so I’ve lost why this is so prevalent.

Are you talking about when someone does a screen record? You can record your iPhone screen if you want. It’s real time. So if I go to record my screen for whatever reason and then someone messages me you’ll see their alert pop up. You then save the video and share it.
