We know that oil is formed from prehistoric plants being converted to oil under pressure in the earth’s crust. Is this process still happening, but we’re not able to access new sources due to using current resources too quickly, or is there only a finite amount and we’re going to run out entirely one day?

Yes. But not as fast as we’re using it.
You have a 100 gallon bucket of water with a hole in it. It’s leaking 3 gallons per minute. You start filling it with a hose that puts in 1 gallon per minute. That means the water level drops by two gallons per minute. The bucket will be empty in less than an hour even though you’ve been putting water into it the whole time.
